Zesty Zoodle Stir-Fry: A Low-Carb Delight

Ingredients:
– 2 medium zucchinis, spiralized into zoodles
– 1 red bell pepper, thinly sliced
– 1 yellow bell pepper, thinly sliced
– 1 small onion, thinly sliced
– 2 cloves of garlic, minced
– 1 tablespoon olive oil
– 1 tablespoon low-sodium soy sauce
– 1 tablespoon rice vinegar
– 1/2 teaspoon ground ginger
– Salt and pepper to taste
– Crushed red pepper flakes (optional for added spice)
– Fresh cilantro, chopped (for garnish)

Instructions:

1. Heat the olive oil in a large skillet or wok over medium-high heat.

2. Add the sliced onions and peppers to the skillet and sauté for 3-4 minutes until they start to soften.

3. Add the minced garlic and stir-fry until fragrant, about 1 minute.

4. Add the zoodles to the skillet and stir-fry for 2-3 minutes until they are slightly softened but still have a bit of crunch.

5. In a small bowl, mix together the soy sauce, rice vinegar, ground ginger, salt, pepper, and red pepper flakes if using.

6. Pour the sauce over the zoodles and toss to coat evenly. Cook for another 1-2 minutes to allow the flavors to meld together.

7. Remove the skillet from heat and garnish with chopped cilantro.

8. Serve the zesty zoodle stir-fry hot as a low-carb and flavorful meal.

Cooking Tips:
– Be mindful not to overcook the zoodles as they can become mushy very quickly.
– You can customize this recipe by adding protein such as tofu, chicken, shrimp, or beef.
