Twisted Taco Pasta Skillet: A Fiery Fusion of Flavors
Ingredients:
– 1 lb ground beef
– 1 small onion, diced
– 1 red bell pepper, diced
– 2 cloves garlic, minced
– 1 packet taco seasoning
– 1 can diced tomatoes
– 1 can black beans, drained and rinsed
– 1 can corn, drained
– 1 cup chicken broth
– 8 oz rotini pasta
– 1 cup shredded cheddar cheese
– 1/4 cup chopped fresh cilantro
– Salt and pepper, to taste
– 1 tbsp olive oil
Instructions:
1. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it up into small pieces with a wooden spoon.
2. Add the diced onion, red bell pepper, and garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
3. Stir in the taco seasoning, diced tomatoes, black beans, corn, chicken broth, and uncooked pasta. Bring the mixture to a boil, then reduce the heat to low and cover the skillet.
4. Cook the pasta mixture for about 15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
5. Stir in the shredded cheddar cheese until melted and well combined. Season with salt and pepper, to taste.
6. Sprinkle chopped cilantro over the top of the pasta skillet before serving.
