Savory Chickpea Stir Fry: A Quick and Delicious Weeknight Meal
Ingredients:
– 1 can of chickpeas, drained and rinsed
– 2 cloves of garlic, minced
– 1 red bell pepper, sliced
– 1 yellow onion, sliced
– 1 cup of cherry tomatoes, halved
– 1 teaspoon of ground cumin
– 1 teaspoon of paprika
– 1 tablespoon of soy sauce
– Salt and pepper to taste
– 2 tablespoons of olive oil
– Fresh parsley, chopped for garnish
Instructions:
1. Heat olive oil in a large skillet over medium heat.
2. Add minced garlic and sauté for 1-2 minutes until fragrant.
3. Add sliced red bell pepper and onion to the skillet and cook for 5-6 minutes until softened.
4. Stir in the drained and rinsed chickpeas, cherry tomatoes, ground cumin, and paprika. Cook for another 5 minutes, stirring occasionally.
5. Add soy sauce to the skillet and season with salt and pepper to taste. Stir well to combine all the ingredients.
6. Cook for an additional 2-3 minutes until everything is heated through and well combined.
7. Remove the skillet from heat and garnish with chopped fresh parsley.
