Instructions:

Chop your spinach, celery, and tomato. Set them aside.
Boil your manicotti shells, making sure not to overcook them. Set them aside once done.
Cook your bacon (3 strips or more, optional) and save the bacon grease.
In another pot, melt 1-2 tablespoons of butter, then add 1-2 tablespoons of flour. Cook for 3-4 minutes until the flour combines with the butter. Add 1 cup of milk and stir continuously to avoid lumps. Then add 1/4 teaspoon of Mrs. Dash (blend), pepper, salt, Creole seasoning, paprika, and garlic powder.
In the same pot, add the cooked bacon, then 1/4 cup of onion and celery. Let it cook, then add spinach and 1 tablespoon of minced garlic. Once done, set aside.
In a bowl, mix 1/2 Philadelphia cream cheese, 1/4 Ricotta cheese (whole milk), 1/4 teaspoon of Mrs. Dash (blend), garlic powder, 1/4 cup of Parmesan & Romano cheese (grated), the bacon, spinach, onion, celery, imitation crab meat, and shrimp. Mix well.
In a glass dish, add some of the white sauce to the bottom.
Start stuffing your manicotti shells with the seafood filling. Place the stuffed shells in the glass dish.
Bake the dish in the oven for about 25-30 minutes.
Once done, remove it from the oven, add bacon and cheese on top, then bake for another 4-5 minutes.
Enjoy! 😊
