Ingredients:

For the Chicken Marinade:
1 lb. Skinless Chicken Thighs
1 cup Plain Yogurt
1 tsp Salt
1 tsp Turmeric
1 tbsp Chili Powder
1 tbsp Garam Masala
1 tbsp Chopped Garlic

For the Curry Sauce:
2 tbsp Oil (vegetable or olive)
1 tsp Cumin Seeds
2 Whole Onions (finely chopped)
1 cup Canned Tomatoes (or 2 fresh tomatoes, chopped)

To Serve:
Basmati Rice or any rice of your choice

Instructions:
Prepare the Marinade:
In a bowl, combine the yogurt, salt, turmeric, chili powder, garam masala, and chopped garlic.
Mix thoroughly, then add the chicken thighs. Ensure the chicken is fully coated.
Cover and let it marinate in the fridge for at least 24 hours for maximum flavor.

Cooking the Chicken:
Heat oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until fragrant.
Add the finely chopped onions and cook until they turn translucent and soft, stirring occasionally (about 5-7 minutes).
Add the canned or chopped tomatoes to the pot and cook for another 3-5 minutes until they break down and combine with the onions.

Adding the Chicken:
Transfer the marinated chicken along with all the marinade into the pot.
Stir well and cook for 5-7 minutes until the chicken starts to brown slightly.
Reduce the heat, cover, and simmer for 15-20 minutes or until the chicken is cooked through and tender, stirring occasionally to prevent sticking.

Prepare the Rice:
While the chicken is simmering, cook your choice of rice according to the package instructions (Basmati rice recommended).

Serve & Enjoy:
Serve the curry chicken hot over a bed of fluffy rice, and garnish with fresh cilantro if desired. Pair with naan for an extra treat!
