Step-by-Step Instructions
1. Prepare the Marinade:
In a bowl, combine yogurt, salt, turmeric, chili powder, garam masala, and chopped garlic. Add the chicken thighs and mix until the chicken is fully coated. Cover and marinate in the fridge for at least 24 hours for the best flavor.
2. Cook the Curry Chicken:
- Heat oil in a large pot over medium heat. Add cumin seeds and let them sizzle for about 30 seconds until fragrant.
- Add the chopped onions, cooking until they become soft and translucent (about 5-7 minutes).
- Add the tomatoes and cook for another 3-5 minutes until they break down and blend with the onions.
- Add the marinated chicken along with all the marinade. Stir well and cook for 5-7 minutes until the chicken starts to brown slightly.
- Reduce the heat, cover, and let it simmer for 15-20 minutes, stirring occasionally, until the chicken is fully cooked and tender.
3. Prepare the Rice:
