Ingredients for Vegetable Beef Soup Recipe

Beef stew meat (cut in cubes)
Olive oil
onions
Carrots
Celery
Garlic
6-8 cans of Low-sodium beef broth
Dried herbs – basil, oregano, and thyme
Salt and pepper
Red potatoes
Green beans
Peas
Frozen corn (you can use fresh corn if you want)
1 Canned tomatoes (make sure to add the juice from the diced tomato’s inside the pot with beef vegetable soup to enhance the flavor.
How to Make Vegetable Beef Soup:
Heat 1 Tbsp olive oil & minced garlic and your onions in a large pot over medium-high heat. Then add meat tenderizer to your meat , season your meat with salt and pepper, mrs dash, garlic powder then add all of the beef and brown about 4 minutes, turning halfway through.
Add celery to the pot while adding 3 cans of Low-sodium beef broth and 1 cup of water, 1 bay leaf, bring to a boil then reduce heat to low, cover and simmer, stirring once or twice throughout, for 30 minutes.
After 30 minutes Add potatoes & 1 can of diced tomato’s, covered, 20 minutes (you can also add green beans with potatoes if you like them very soft).
Add green beans and simmer 15 minutes longer, or until all of the veggies and beef are tender.
Pour in corn and other veggies and simmer until heated through, about 5 minutes.
